3 Cheap, Easy, and Clean Meals

So…I started a thing last Friday, and I’m trying real hard to be a good girl and follow through.

Friday’s Favorites.

Today I want to share a little insight into our diet. People are starting to notice that we have…shrunk, a bit. My husband (annoyingly) has lost WAY more weight than I have. But that is just always the way, isn’t it? Oh, men.

We’re now in our third month of our “lifestyle change” (read: diet) and it’s starting to get difficult. I’m hitting a wall where I want results NOW, and I don’t want to wait any longer. However, big change comes in small chunks. And so, I stick to my trusty guns and revert back to what has been working.

So Friday’s Favorites is as much for me as it is for you.

Here are three go-to meals that keep me on track with my diet.

No B.S. here. These are meals that my husband and I eat over and over again because they really do satisfy our cravings, and leave us full. Equally important? They are cheap, easy, and clean!

I have lost TWENTY POUNDS. That is a considerable amount of weight, right? I’ve lost it by being strict and vigilant when it comes to the sort of calories that enter my body. As much as I love trying new recipes and experimenting with new flavors, the fact remains that I just don’t have the time. I need standbys to get me through the week.

These are my diet standbys.

1.) Tuna Salad: 1 can chunk light tuna, in water + 1 small avocado + lemon juice + chopped pickles + chopped green onions + seasonings; served over a bed of spinach and drizzled with lemon juice. Holy yum, this is way good. {200 calories}

2.) Grilled Asparagus + Eggs Over Easy: I’m one of those people who worships asparagus. I demand you find a more perfect food. This little plant is life-giving and delicious. I never get tired of it.

We toss it in olive oil and garlic salt, and then roast it in the oven at 400 degrees for about 30 minutes. Plop two eggs over easy on top and Wa-la! Delicious, packed with protein, and low on the old calorie score. {200 calories+olive oil}

3.) Quinoa Caprese Salad: This is the perfect meal for a quick lunch. It’s really, really yummy and packed with nutrients. Go visit My Life and Kids Blog to see my recipe! {300 calories}
